
I like to call what I do "Food for Life." This means a few different things. It means making food for you so you have more time for your life. It means, at its most basic, food that sustains you. It also means food that sustains all of us. When I shop as a personal chef, for our bone broth or for myself and my family, I always use my own reusable bags. I always use cleaning products that are healthy for you and the environment as verified by third party testing groups. I purchase bulk goods over pre-packaged whenever possible and most importantly, I purchase local as much as I can. I excel at cooking seasonally to accentuate the wonders of eating local food. Any sort of animal product that I buy will come from animals that are raised or harvested as sustainably as possible, from Butter and Beef in the pasture to Salmon and Scallops in the sea. These products are better for the animals' well being, your well-being and the planet's. I have worked hard to establish relationships with local farmers and fishmongers to get amazing sustainable goods at competitive prices. This is all part of the personal chef service that I can provide for you and the work we put into our Bone Broth and Lard.
After I procure these amazing raw materials, I use my 13 years of professional cooking experience to turn them into dishes that you and your family will love. I have worked in great restaurants around the country learning classic cuisines, from Tex-Mex and BBQ to New American and Southern as well as Midwestern comfort foods. In my own time I have worked hard to learn the basics of Thai, Vietnamese, Chinese and Indian cooking and I can create a number of delicious dishes in each style. I have a deep appreciation for Italian Folk recipes and French sauces and can make you great foods that use each. I also have worked very hard to adapt many of these cuisines and styles to work with special diets such grain-free, gluten-free, "Paleo," vegetarian diets, sugar-free, etc. and can accommodate most dietary needs including medically necessary diets and high performance diets for athletes. I work hard to provide food that is as healthy, sustainable, and wholesome as possible.
Also, as a professional and former Board member of the Piedmont Culinary Guild, I serve the mission of the PCG which is to promote, strengthen, and secure our local food community and the foods and flavors of the Piedmont Region. The PCG is an amazing Charlotte-based network of Chefs, Farmers, and Local Food Artisans joined together by a passion for local food and our community.
